Ingredients
Base:
3 ounces (½ cup) high-quality strawberry, raspberry, or cherry sorbet (2 medium scoops; ensure soft, creamy texture)
¼ ounce Amaro (e.g., Amaro Nonino, Montenegro, or Averna; adjust to taste)
2.5 ounces dry sparkling rosé (divided: 2 ounces for mixing, 0.5 ounces for topping)
Garnish:
- 1 brandied or maraschino cherry (optional; pitted if large for easier garnish)
Preparation
Step 1: Pre-Chill Vessels
Fill a small mixing bowl with ice water and let sit for 5 minutes to chill (this prevents the sorbet from melting prematurely).
Place the coupe glass or Nick and Nora glass in the freezer for 10 minutes to pre-cool, or fill it with ice water and set aside while preparing the base.
Step 2: Mix the Base
In the pre-chilled mixing bowl, add the sorbet, Amaro, and 2 ounces of dry sparkling rosé.
Gently whisk with a bar spoon or fine wire whisk in a circular motion until the sorbet is mostly melted, creating a creamy, airy texture. Do not over-stir—retain a slight, pleasant sorbet grain for texture.
Step 3: Assemble the Drink
Strain the mixture through a fine-mesh sieve into the pre-cooled coupe glass (optional, but ensures a silky finish; skip if sorbet is ultra-smooth).
Slowly pour the remaining 0.5 ounces of sparkling rosé over the back of a bar spoon to create a layered effect, allowing the rosé to float atop the sorbet base.
Step 4: Garnish & Serve
Drop a brandied or maraschino cherry onto the rim of the glass (or skew it on a cocktail pick for a polished look).
Serve immediately to preserve the frosty texture; avoid letting the drink sit at room temperature for more than 2 minutes.
